A bright and fresh palate full of raspberries and cherries. The finely boned tannin builds an elegant structure, balanced with a succulent acidity

Totally de-stemmed, whole berry ferments. Hand plunged once a day, increasing to twice daily during peak ferment. Gently pressed with final 50-100L/t separated off to avoid hard tannins.
