Fermentation method: Small open top fermenters. 100% whole berry. A mixture of plunging and pump-overs were used during fermentation. An average of 2-3 weeks total time on skins. Natural yeasts were used and once ferment was complete the wines were pressed to tank to settle overnight and then transferred to barrels to complete MLF. 18-month barrel maturation in French barriques, 30% new. |

The cabernet comes off old vines planted in 1974 in Great Western and, wow, what a contribution they make! Brilliant,
deep-hued purple. A powerfully good aroma of concentrated fruit and spice: blackberry, boysenberry, musky sweet
aromatics, pepper and violets. It resonates across the tongue, the 2 grapes in complete unison. Tannins run deep but fine,
through to the finish.
