Tasting Notes

Deep, dark crimson.
Rich and ripe dark fruits to the fore, lifted by complexing cedar and five spice.
Vibrant red and blackcurrant supported by quality French oak spice. The finely knit tannin provides a great, refined structure and is balanced with a lively acid backbone giving great length and assuring longevity.

Handpicked and destemmed, the whole berries were fermented in open fermenters. Pumped over and hand plunged during the ferment, they were left on skins for a total of 30 days. Cool climate Cabernet is sensitive to site and aspect, so our west facing site and a gentle slope captured the warmth required to reach optimal ripeness. Matured in French oak barriques for 18 months to support and enhance the fine-grain silky tannins.
